I’m taking a break from all my soup recipes for something a little more festive, this apple cider recipe is so delicious, it’s like Christmas in a mug! Perfect for any December celebrations and as an added bonus it makes your house smell amazing!
thumb size piece of ginger, peeled and sliced
1l apple cider (any will do)
500ml apple juice
2 star anise
2 cinnamon sticks (plus extra for garnishing)
125ml dark rum
Slice 1 of the apples (the other is to garnish) and the orange into thin slices, combine the spices, ginger and sliced fruit with the apple juice and cider and heat gently, it should be just below a simmer, don’t let it boil! Leave it to infuse for 30 min to an hour stirring occasionally. Add the rum and cointreau right at the end. This recipe isn’t to precise and up to individual taste so adjust the alcohol and juice to your liking. Garnish with the remaining apple and cinnamon sticks and enjoy!
